- 4 eggs, hard boiled & shelled
- 1 egg, beaten
- 300g sausage meat
- 4 rashes of bacon, chopped finely
- 1 large mushroom, chopped finely
- 1 tablespoon chives or parsley, chopped
- Flour for dusting
- Oil for deep frying
Mix the sausage meat, bacon, chopped mushrooms, herbs then divide into four equal balls.
Dust the shelled hard boiled eggs with flour and wrap each with a portion of sausage meat mixture. Press the edges firmly together to create a smooth round surface.
Roll in the beaten egg and breadcrumbs.
Fry in hot oil until golden brown.
Serve hot or cold.
Scotch Eggs are great picnic food too. Make a platter of Scotch Eggs, slices of ham off the bone, pickled onions, gherkins, baby tomatoes and Swiss cheese. And of course, a cold beer or three.
