Ingredients

  • 4 eggs, hard boiled & shelled
  • 1 egg, beaten
  • 300g sausage meat
  • 4 rashes of bacon, chopped finely
  • 1 large mushroom, chopped finely
  • 1 tablespoon chives or parsley, chopped
  • Breadcrumbs
  • Flour for dusting
  • Oil for deep frying

Method

Mix the sausage meat, bacon, chopped mushrooms, herbs then divide into four equal balls.

Dust the shelled hard boiled eggs with flour and wrap each with a portion of sausage meat mixture. Press the edges firmly together to create a smooth round surface.

Roll in the beaten egg and breadcrumbs.

Fry in hot oil until golden brown.

Serve hot or cold.

Scotch Eggs are great picnic food too. Make a platter of Scotch Eggs, slices of ham off the bone, pickled onions, gherkins, baby tomatoes and Swiss cheese. And of course, a cold beer or three.
